The above photo is courtesy of my Mum who made this culinary delight! My mum is also a Coeliac and, like me, has sampled many a gluten free sponge but this one she assures me is the nicest she has ever made! Unfortunately, my Mum lives over two hours away hence I didn’t get to sample a piece and I didn’t think it would fare very well travelling to me via Royal Mail! Hence, I can only take her word for it for now until I try the recipe out. Below is the recipe if anybody would like to give it a whirl, it is made with Glutafin white mix, which you can get on prescription or try your local Holland and Barrett as they have recently started stocking some of their products there.
8oz Glutafin White Mix
1 tsp gluten free baking powder
6oz caster sugar
3 medium eggs
1 tsp vanilla essence
Place all ingredients into a bowl and beat with an electric hand mixer for two minutes. Divide the mixture between two 8 inch sandwich tins (greased and lined) and pop in the oven (170 degrees/gas mark 3) for 30 minutes.
Whip up a massive batch of buttercream (I like to ensure I make way more than necessary so I can lick the bowl afterwards!) for the middle and top of the cake.
