Who doesn’t love a crumble for desert on a Sunday even when you feel you can’t fit anymore food in? For the longest time my go to was a straightforward apple crumble with copious amounts of cinnamon and drowned in either custard or vanilla ice cream. It was time to find a new crumble recipe just to mix things up a little. I found this little gem of a recipe on Livia’s Kitchen blog. I love rhubarb and strawberries so thought I would give it a whirl. I got all my ingredients together and set to work.

Stewing fruit is strangely satisfying. This recipe was incredibly straightforward – minimal effort with maximum results!

Voila! I teamed the crumble with a little Greek yoghurt which worked amazingly well and has slightly less calories than ice cream or custard. My housemate had always stated how he really doesn’t like rhubarb – after tasting a bit of mine he wandered into the kitchen and piled up a bowl with his own portion! Result!
